Of course, there is still the offline challenge (on the plane, etc.) which is what things like SharePoint Workspace and the Office Document Cache (Synchronization Center) in 2010 are trying to address as well. But I do have the following remarks: SharePoint lists are synched to the local client - not with Exchange - as Matt B points out. Also, I don't see how reliable VPN connections solves the problem of not being to edit offline (ref: your plane example). I think training users to use Outlook and/or Groove to work with SharePoint offline is still the best answer to increase adoption for users who find themselves without a connection often (i.e the plane). Does that hold true for Exchange users also? I thought this was coded to store locally, so you can retrieve/manipulate data when offline.
