Sharepoint's check out function, and its response to directly double clicking a document...can these be changed? Our whole reason for using Sharepoint is to gain check out/check in and maintain version control. We want every user to check out documents before editing them. We want them to be able to instinctivelydouble click on any document in a sharepoint doc library and have the checkout happen automatically.

Currently if a user double clicks a doc, they can in essence create a new version of the .doc with its own version queue and they don't even have to check it out to do this. So, that "double-click to open", that Microsoft has conditioned the entire human race to use, can in Sharepoint entirely circumvent the check out function and cancel out version control. This has always seemed like a bass-ackward approach to me.
