I want to setup task lists for various projects - and I'd like to be able to add sub-tasks, which it doesn't look like WSS currently offers. Is there a workaround?

Well, if all you're looking for is a logical relationship between tasks you might look at the Issue Tracking list template, which has the "related issues" feature built in. This is easily customized into a task list, and in fact it's the template that I normally start from when I want an enhanced task list.
As to formal hierarchical relationships between tasks and sub-tasks, you'd need Project Server for that.
